INGREDIENTS
• 1 tbsp vegetable oil
• 1 bay leaf
• 1 tsp garlic paste
• 1 green chilli, chopped
• 1 cup shrimps , shelled and deveined
• 1/4 cup mix of carrots grated ,green bell pepper
(finely chopped ) and peas
• 5 cups water
• Salt, to taste
• Freshly ground black pepper to taste
METHOD
• 1. In a skillet over low-medium heat, heat the vegetable oil.
• 2. Add the bay leaf, garlic paste, and green chilli. Cook for about 1 minute until fragrant.
• 3. Add the shrimps and stir well to combine.
• 4. Add in the vegetables and the water.
• 5. Cook until the shrimps and the vegetables soften about 10 minutes .
• 6. Remove and discard the bay leaf. Season to taste with salt and pepper and serve hot garnished with fresh coriander sprigs .
