Iftar Recipe: Pesto shrimp risotto

Ingredients
2 tablespoons olive oil
4 garlic cloves,minced
1 cup arborio rice
2 1/2 cups chicken broth
1/2 cup freshly grated Parmesan cheese, plus more for garnish
15 cooked large shrimp (shell removed)
1 tablespoon unsalted butter
1 tablespoon fresh lemon juice
Salt as per taste
Pesto sauce (readymade)for serving

Preparation
Preheat the oven to 200°C .
In an oven proof casserole, heat the olive oil.
Add  garlic and rice and cook over moderate heat, stirring, until very fragrant for 2 minutes.
Stir in the broth and bring to a boil. Cover and bake for about 20 minutes, until the rice is tender.
Stir in the 1/2 cup of cheese, the shrimp, butter and lemon juice; season with salt.
Serve drizzled with pesto and garnished with cheese.
