Start your new year with a healthy diet

Eating healthier doesn't mean sacrificing flavour. Get the New Year started off on a nutrient-rich diet.

SPINACH SCRAMBLED EGGS
Ingredients
2 large eggs
3 cups baby spinach
Salt and pepper to taste
1 tsp oil
Preparation
Whisk eggs in a bowl, season with salt and pepper and keep aside.
In a non-stick pan, heat olive oil and add spinach.
Cook till spinach wilts.
Pour in the whisked eggs and cook while stirring for about a minute or till eggs are done or set.
Serve hot.

CUCUMBER GRAPE SALAD
Ingredients

2 cups seedless grapes (halved)
1 cup cucumber (diced)
1/2 cup rocket leaves
3/4 cup fresh parsley( finely chopped)
Dressing
1tsp olive oil
1tsp honey
1tsp mustard paste
Salt and pepper to taste
Preparation
Mix all the ingredients of the salad in a bowl and refrigerate for an hour.
In another bowl, gently mix the dressing ingredients.
Just before serving, drizzle the dressing onto the salad and toss well to combine.
Serve immediately.
