GAZPACHO SHOTS
Ingredients
• 3 and 1/2 cups tomato juice
• 1 medium onion, quartered
• 1 large bell pepper, deseeded and diced
• 1 large cucumber, diced
• 2 garlic cloves, minced
• 1/4 cup extra virgin olive oil
• 2 tablespoons balsamic vinegar
• 1/2 tablespoon Worcestershire sauce
• 1/2 teaspoon cumin
• 1 teaspoon hot sauce
• Salt and pepper to taste
Preparations
• Add tomato juice, onion, bell pepper, cucumber and garlic cloves to a blender.
• Pulse until well-blended.
• Add olive oil, vinegar, Worcestershire sauce, cumin, hot sauce, salt and pepper and blend till smooth.
• Pour into shot glasses and serve cold.

CUCUMBER TUNA BITES
Ingredients
• 3 cucumbers (large)
• 1 can of tuna drained
• 1 tbsp mayonnaise
• 2-3 tbsp chopped spring onion greens
• 1/4 avocado cut into chunks
• Salt & pepper to taste
Preparations
• In a bowl combine drained tuna, mayonnaise, avocado, spring onion greens, salt & p epper. Mix until everything is well combined.
• Cut cucumbers into 1 inch round pieces.
• Top with the tuna spread. Serve cold.

DEVILLED EGGS
Ingredients
• 10 hard-boiled eggs
• 1/3 cup plain Greek yoghurt
• 2 teaspoons Dijon mustard
• 1/2 teaspoon garlic powder
• Salt and pepper to taste
Preparations
• Slice the hard-boiled eggs in half lengthwise. Scoop out the egg yolks and transfer them to a small mixing bowl.
• Using a fork mash the egg yolks completely.
• Add in the Greek yoghurt, Dijon mustard, garlic powder, salt and pepper to taste and mix well.
• Either using a spoon or a piping bag, fill the inside of the egg whites with the yolk mixture.
• Sprinkle each devilled egg with a pinch of red chilli powder and serve at room temperature or cold.GREEK SALAD SKEWERS

GREEK SALAD SKEWERS
Ingredients
• 12 bite-size slices red onion
• 12 slices cucumber
• 6 cherry tomatoes, cut in half
• 12 bite-size chunks feta cheese
• 12 kalamata olives (pitted)
• 1/4 cup olive oil
• 2 teaspoons vinegar
• 1/2 tsp garlic powder
• 1/2 tsp mixed dried herbs
• 12 wooden skewer picks
Preparations
• Thread vegetables, feta cheese and olives onto wooden skewers. Mix olive oil, vinegar, garlic powder and mixed dried herbs together in a bowl.
• Drizzle this over skewers. Serve immediately.
