Five ways to cook peaches

Sweet and juicy, peaches are known to be a real summer delight. While we all like to eat them raw, why not get innovative with scrumptious peach recipes?
Chilled soup
Boil two cups of water. Blanch peaches till tender and put them in ice water. Once cooled, drain well, peel the skin and remove the pits. In a blender take the peaches, 1 cup water, 1 cup apple juice, 1/4 cup honey, 1 lime zest and juice, salt and pepper, and blend until smooth. Transfer to a bowl, cover with plastic wrap, and refrigerate for two hours. Serve the chilled soup garnished with mint.
Smoothie
Take two ripe bananas and cut them into slices. Take two peaches, a handful of strawberries, 1 cup of almond milk, and few ice cubes. Place the fruits in a blender with the almond milk and ice and blend until smooth. Add more almond milk if you are looking for
thinner consistency.
Roasted
Preheat oven to 200°C. Cut the peaches, around six, in halves and remove pits. Take 11/2tsp lemon juice, add 1tsp sugar and toss the peaches in it. Arrange the peaches, cut-side up, in a baking dish and roast till tender. Normally it takes around
20-25 minutes.
Pickled
Take 2tbsp vinegar in a pan, and stir 2tsp sugar. Add 1 cinnamon stick and few cloves and boil. Take six to eight diced peaches, put them in pint jars. Pour the syrup from the top and fill the jar. Process in a hot water bath for 10 minutes. Seal the jar and let the syrup marinate with the peaches.
Salad
Take 1/2 cup torn fresh basil leaves, 1tbsp extra virgin olive oil, 2tsp vinegar, 1tbsp honey, and 1 cut shallots and blend. Season with salt and pepper. Combine cut peaches and tomatoes in a bowl and toss to coat with the dressing. Top with feta cheese.
