CHILLED CANTALOUPE - PAPAYA-PEACH SOUP
Place 1 ripe papaya, peeled, seeded and chopped in food processor and process until smooth; add 2 large ripe cantaloupes, peeled, seeded and chopped and process in batches until pureed; add 2 peaches, cut up and pitted until pureed. Add 1/3 cup plain yoghurt, non fat, 1 tablespoon honey and 1/8 teaspoon ground nutmeg; process until mixture is smooth and well combined. Transfer soup to large bowl; cover and refrigerate until well chilled, about 1 hour. Garnish with mint sprigs and serve.

CHICKEN PAPAYA SALAD
Mix 2 cup cooked chicken breast, chilled and diced and 1/4 cup celery, chopped. In separate container mix 1/4 cup mayonnaise, 1/8 teaspoon dry mustard, 2 teaspoons lemon juice, 1/2 teaspoon curry powder, dash of white pepper, 2 tablespoons sugar, and add to celery and chicken. Scoop seeds out of 1 papaya and brush the papaya with 2 teaspoons lemon juice. Fill the papaya halves with the chicken salad and serve.

BAKED CHICKEN WITH PAPAYA
Combine 3/4 cup honey, 1/2 cup freshly squeezed lime juice, 6 tablespoons butter and 3/4 teaspoon freshly ground nutmeg in saucepan. Cook over medium heat until thickened, stirring occasionally to blend. Dice 1 papaya, peeled and seeded and use 3/4 of papaya and slice remaining ¼ into thin wedges. Heat 1 tablespoon butter and 1 tablespoon sesame oil in skillet. Sear 6 boneless chicken breasts, cut in halves, skin side down, until golden brown. Place in large baking dish and bake at 175 C degrees for 10 minutes. Cover with honey glaze and diced papaya. Continue baking until chicken is tender adding fresh rosemary, about 10 minutes longer. Serve hot with glaze and diced papaya. Garnish with sliced papaya and raspberries and fresh parsley.

FROZEN PAPAYA CREAM
Cut 2 medium papayas in half. Scoop out seeds, scrape out pulp about 2 cups. Puree with 1/4 cup lemon juice and 2 tablespoons sugar, until smooth. Stir in 1 cup light cream. Pour mixture into pan. Place in freezer 1 hour until frozen 1 inch from sides. Stir until smooth, return to freezer until softly frozen. Put in chilled bowl, beat until smooth. Serve softly frozen or freeze until firm.

PAPAYA BREAD
Preheat oven to 175C degrees. Cream together 1/2 cup butter and 1 cup sugar. Beat in 2 eggs. Mix in 1 cup chopped ripe papaya, 1/3 cup chopped walnuts and 1/2 cup raisins. Add 1 1/2 cups flour, 1/4 teaspoon baking powder, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1 teaspoon salt, 1 teaspoon baking soda, 1/2 teaspoon ginger, 1/4 teaspoon cloves and stir until well blended. Pour into a greased and floured loaf pan. Bake for one hour or until browned. [email protected]
