HOMEMADE SWEETENED CONDENSED MILK
Put into blender 3 tablespoons melted butter, 2/3 cups sugar, 1 cup instant non fat milk (powdered), 1/3 cup boiling water, pinch of salt and process until smooth. This makes the same amount as the canned and can be used in any recipe calling for sweetened condensed milk. Can be kept for weeks in refrigerator.

SWEET YOGHURT WITH CONDENSED MILK
In a large bowl mix 400g condensed milk, 400g evaporated milk and 400g Greek yoghurt or thick flavourless plain yoghurt. Whisk the contents till there is no lump. Pour the mixture in a baking container of your choice. Bake at 180C for exactly 15 minutes and then turn off the oven. Do not open the heated oven and let the yoghurt be inside and let it cool down slowly for at least 6-7 hours or overnight. Remove the set yoghurt from the oven, cover with a cling film or aluminium foil and put it in the fridge. Serve chilled.

LEMON CHEESECAKE
Spray a medium sized deep pan with oil. Layer 1 packet finger biscuits on the bottom of the pan to form the crust. Dissolve 1 packet lemon jelly crystals in 1/2 cup boiling water; stir to ensure they are completely dissolved and allow to cool. Cream together 3 large packets of Philadelphia cream cheese, softened, 1 can condensed milk and juice of 2 large lemons. Gently mix the cooled jelly mix into the cheese mixture, mixing well. Whip 300ml whipping cream until stiff and gently fold through the mixture. Add zest of 2 large lemons, stirring gently. Pour the cheese mix into the pan. (Don’t stir too much or shake it up; the air whipped in keeps it light.) Refrigerate overnight. Decorate with some more whipped cream and the decorations of your choice. Cut into serving size bars and serve or store in an airtight container.

CONDENSED MILK CREAM CHEESE PIE
Blend together 3/4 can condensed milk, 230g cream cheese, 1 tablespoon lemon juice, 1 tablespoon vanilla and place in prepared Graham cracker crust. Place in refrigerator for 4 hours until it sets. Place 1/2 can cherry pie filling on top.

FROZEN YOGHURT DESSERT
Combine 400g can condensed milk and 4 cups mixed berry yoghurt in a large bowl. Mix well. Fold in 1 packet strawberries, sliced, 2 bananas, sliced, 1 packet blueberries, 2 cups seedless grapes. Add 1/2 cup chopped pecans and 1 bag mini-marshmallows. Stir together. Pour into a pan, and freeze until firm. Remove from freezer several minutes before serving. You can use any other fruits.
