Iftar Recipe: Peanut Salsa

Ingredients
1½ cups roasted peanuts
½ cup finely chopped tomato
¼ cup fresh coriander leaves, finely chopped
¼ cup finely chopped spring onion
1 tsp paprika
1 tsp minced garlic
Juice of 1 lemon
Salt, to taste
Preparation
In a small bowl, combine the peanuts, tomato, fresh coriander, spring onion, paprika and garlic. Toss to combine.
Add lemon juice, and season to taste with salt. Mix well and serve.
