A handful of ingredients are all you need to make this quick and easy beetroot pasta.
•1/2 shredded beets (shredded)
•1/2 cucumbers (shredded)
•1/2 lemon juice(optional)
• 1tsp chilli flakes
•1 tbsp fresh dill leaves finely chopped+ more for topping.
•1 tbsp olive oil + more
•1/2 cup yoghurt
• Salt to taste
•1 cup fusilli pasta (cook according to pack instructions)
Grate the cucumber and beetroot.
Combine yoghurt with cucumber, beetroot, dill and salt. Mix everything well and add olive oil, chilli flakes and lemon.
Add the pasta to the tzaziki and mix well. Garnish with some chopped dill leaves.
