For the dressing
½ cup finely chopped fresh mint leaves
1/3 cup vinegar
½ tsp salt
½ tsp freshly ground black pepper
2 tbsp olive oil
For the salad
250g haloumi cheese, sliced
2 sweet potatoes, boiled, peeled and cubed
2 hard-boiled eggs, quartered
10 lettuce leaves, torn into bite-sized pieces
Combine all the dressing ingredients, except the oil, in a bowl.
Add oil slowly, whisking all the while, till well incorporated.
Grill the cheese on a grill pan for about 3 minutes on each side.
Mix the sweet potatoes, eggs , lettuce in a bowl and add it to the dressing.
Toss till the salad is well coated with the dressing.
Arrange the cheese on top and serve immediately.
