4 chicken breasts
¾ cup olive oil
2 tbsp lemon juice
2 tsp minced garlic
½ cup chopped onion
½ cup fresh finely chopped parsley leaves
2 tsp fresh finely chopped basil leaves
1 tsp dried thyme
1 tbsp dried oregano
1½ tsp salt
½ tsp freshly ground pepper
Combine all the chimichuri ingredients in a bowl and mix well.
Wash the chicken and pat dry. Rub some of the chimichurri over the chicken and marinate overnight in the refrigerator.
Reserve some of the chimichurri sauce for brushing the chicken while grilling.
Grill the chicken breast in a grill pan over medium heat for about 5 minutes on each side.
Brush periodically with the remaining
chimichurri. Raise the grill temperature to high and grill for another 3-4 minutes on each side, till light golden and well done .
