4 dried red chillies, seeds removed
1 medium-size tomato, finely chopped
¾ cup mozzarella cheese
3 garlic pods
1/2 inch ginger
1 tbsp oil
1 cup cooked rice
Salt to taste
Pinch of freshly ground black pepper
Finely chopped fresh parsley for garnish
In a blender, combine the red chillis, tomato,cheese,ginger and garlic.
Blend to a smooth paste .
In a skillet over medium heat, heat
oil and add the red chilli mixture and sauté until the paste is thoroughly cooked and fragrant.
Stir in the rice and cook until the paste coats the rice well and the rice is heated through.
Season to taste with salt and pepper.
Garnish with fresh finely chopped parsley and serve hot.
