Recipe of the week:  Cottage Cheese Open Toasts


200g cottage cheese, grated
3 carrots, grated
2 onions, grated
1/2 cup cabbage, finely chopped
1 tbsp cornflour
1/2 tbsp butter
Salt and pepper to taste
2 tbsp corn flakes
6 slices of wholewheat or white bread

In a pan melt butter and stir fry onions until pink .
Add in the carrots and cabbage and sauté and season with salt and pepper
Add in the cornflour, and give it a good stir.
Keep this mix aside.
Spread the mixture on each slice of bread .
Crush the cornflakes and sprinkle over the mixture on the bread .
Top with grated cottage cheese and bake in a preheated oven at 170c for 5 mins or till the bread gets crisp .
Cut into triangles and serve hot with ketchup .
