Recipe of the week: Wheat Germ Chicken Cutlets

Ingredients
1 cup roasted wheat germ
1 cup whole wheat flour
2 large potatoes, boiled and mashed
1/2 cup shredded chicken
1 carrot, grated
1/ cup spring onion green, finely chopped
1 onion, finely chopped
1/2 inch ginger piece , grated
1 tsp garlic paste
3 green chillies finely chopped
Salt and pepper to taste
Oil to shallow fry

Preparation
Take potatoes and shredded chicken in a mixing bowl and add all the vegetables, garlic paste, green chillies, ginger and mix well.
Season with salt and pepper.
Sprinkle half of the quantity of flour and wheat germ to this mixture .
Mix well , and with greased hands make cutlets of desired shape from this mixture .
Refrigerate for 10 minutes, covered .
Take the remaining flour and add water gradually to form a slurry .
Dip each cutlet in the flour slurry , and roll in remaining wheat germ for it to coat the cutlets well .
Shallow fry a few at a time in a greased skillet till golden brown on both sides.
Serve hot with ketchup.
