Recipe of the week: Baked Antojitos Cups

 Packed with vegetables, these appetiser cups are not only healthy but also stand out as party pleasers

6 tortillas
½ cup mozzarella cheese
½ cup cheddar cheese
½ cup corn (boiled)
½ red bell pepper, finely chopped
½ yellow bell pepper, finely chopped
1 tbsp. ketchup
Pinch of mixed dried herbs
¼ cup finely chopped spring onions (white and green)
Salt and pepper to taste

Preheat the oven to 180C. Take a muffin tray and lightly grease.

Cut each tortilla into 4 round pieces with the help of a cookie cutter. Slide in the pieces into the muffin tray and bake for 10 minutes or until crisp.

To serve, in a mixing bowl add the corn, vegetables, mixed dried herbs, salt and pepper, cheese, ketchup and spring onions. Mix well till flavours incorporate.

Top the tortilla cups with the mixture and bake again in the preheated oven for another 5-7 minutes or till the cheese turns light golden.

Serve hot.
