Eid Special: Kunafa - Sheer Khurma

Ingredients

- Melted Unsalted Butter: 100 gms

- Kunafa Pastry: 30-40 gms

- Milk: 2 litres

- 1 Cup Sugar

- 1.5 Cup Water

- Saffron Strand

- Cardamom Powder

- 1/2 Cup Almonds Peeled

- 1/2 Cup Cashew

- 2-3 tsp Ghee Mixed Nuts for roasting in ghee and garnish.

Preparation

- Take a baking tray – Place the Kunafa Pastry, layer each of the Kunafa dough separately, to roast evenly in the Oven. Apply melted butter over the pastry using the brush.

- Pre-heat the Oven, and place the Kunafa and bake for 20 mints 180ç

- Meanwhile let’s prepare the Milk Mixture and Sugar Syrup.

- A clean and thick pot is needed to heat the milk and another pot to make Sugar syrup.

- Add Saffron strands to the milk while boiling, once it begins to boil, reduce the flame and let it cook until the milk reduces 1/3rd.

- To the other pot add sugar, water and Cardamom powder and boil until a string consistency is achieved.

- Take a Mixer Jar to Blend 1/2 Cup Almonds and 1/2 Cup Cashew to make a paste.

- Once the milk is reduced add the Almond and Cashew Paste to it and boil for 5 -6 minutes until its raw smell fades and Milk thickens.

- Check on Kunafa After 20 minutes, if the Kunafa dough has turned crispy and brown in colour then the Kunafa is ready.

- Make sure that the Sugar Syrup and Milk Mixture are warm while adding to Kunafa together.

- Now Roast the sliver sliced almonds and pistachios and other nuts of your choice to garnish the Sheer Khurma.
