CHICKEN MACARONI GRATIN
A family-friendly meal with the goodness of chicken and the twist of macaroni will bring a smile on the face of picky eaters for sure.

Ingredients
• 2 1/2 cups macaroni
• 3 cups shredded cooked chicken
• 1/2 zucchini, halved lengthwise,
thinly sliced
• 1 clove garlic, crushed
• 1 tablespoon mixed dry herbs
• 300ml cream
• 2 tablespoons Dijon mustard
• 2 1/2 cups mozzarella cheese
• 1 cup breadcrumbs
• Salt as per taste

Preparation
• Preheat oven to 200°C. Grease a 20cm square ovenproof dish. Cook macaroni in a saucepan of boiling salted water for 10 minutes or until almost tender. Drain. Return to pan.
• Add chicken, zucchini, garlic, mixed dry herbs, cream, mustard and half the cheese to pasta; stir to combine. Transfer chicken pasta mixture to greased baking dish.
• Combine remaining cheese and breadcrumbs. Sprinkle over chicken pasta mixture. Bake for 15 minutes or until browned and bubbling. Serve with salad.

EASY SPINACH GRATIN

One delicious way to devour spinach! The parmesan cheese in this recipe lends that irresistible taste and texture!

Ingredients
• 3 tablespoons butter
• 1 large onion, finely diced
• 1 clove garlic, minced
• 1/4 cup all-purpose flour
• 2 1/2 cups milk
• Salt and pepper as per taste
• Pinch of nutmeg
• 11/2 cups of finely chopped spinach
• 1/2 cup Parmesan cheese, grated
• 1/2 cup bread crumbs

Preparation
• Preheat oven to 200 degrees C, grease a baking dish with butter or oil and set aside. Place a large skillet over medium heat then melt butter. Add onions and cook till pink. Add garlic then cook for a minute or till the rawness goes.
• Add flour then cook, stirring constantly for a few minutes. Add milk, salt and nutmeg then stir until combined.
• Bring to a boil and reduce heat to low and simmer for 10 minutes, stirring continuously to avoid lumps and the mix sticking to the bottom.
• Add spinach and Parmesan cheese to sauce and stir until completely combined. Taste and season with additional salt and pepper if necessary. Transfer to prepared baking dish and sprinkle with breadcrumbs. Bake for 15 minutes or until the top becomes golden.

TUNA POTATO GRATIN
A classic gratin of tuna and potatoes that serves as a one pot meal and is a sheer delight.

Ingredients
• 1/2 cup thin potato slices
• 2 cans of tuna (drained)
• 2 cups green peas (frozen)
• 1 packet béchamel readymade sauce mix
• 2 cups water
• 2/3 cup milk
• 2 tablespoons butter
• Salt and pepper as per taste

Preparation
• Heat oven to 220 degrees C. Place potato slices, tuna and peas in a bowl and gently mix. Season with salt and pepper as per taste. Transfer to a greased baking gratin dish. Combine sauce mix, water, milk and butter in a saucepan. Bring just to a boil, stirring occasionally. Remove from heat and pour sauce over potato tuna mixture in gratin dish.
• Bake 25 to 30 minutes or until potatoes are tender. Let stand 5 minutes before serving to thicken sauce.

CHEESY BROCCOLI GRATIN
This is a creamy gratin dish that is loved by one and all.

Ingredients
• 3 tablespoons unsalted butter
• 3 tablespoons all-purpose flour
• 1-1/2 cup whole milk
• Salt and pepper as taste
• Pinch of nutmeg powder
• 3 cups of broccoli (cut as florets)
• 1-1/2 cups shredded cheddar cheese
• 1/2 cup bread crumbs

Preparation
• Preheat oven to 200 degrees C. Grease a gratin/casserole dish.
• In a saucepan over medium heat, melt the butter. Slowly add flour. Whisk until smooth. Continue to whisk constantly for a minute.
• Add the milk, salt and nutmeg. Continue to whisk constantly until mixture comes to a boil.
• Reduce heat to low and simmer, stirring occasionally until the sauce is thickened. Add pepper and whisk again to combine. Remove sauce from heat and set aside.
• Boil or steam broccoli florets till tender.
• Place the broccoli in the greased casserole/gratin dish and sprinkle with half of the shredded cheese.
• Evenly pour white sauce on top of the broccoli and cheese. Sprinkle with the remaining cheese.
• Top with bread crumbs. Bake until lightly brown on top for about 15 mins.
