Nothing adds a fresh zing to recipes like lime

SHIKANJI
Considered as India’s national cold drink, this spiced lemonade with black salt is a must try.
Ingredients
• 3 lemons, medium size, squeeze juice and set aside
• 4tbsp sugar
• 4 cups water
• 1tsp black salt
• 4-5 mint leaves
• 6-8 ice cubes
Preparation
• In a small bowl, add 1/2 cup water and sugar and mix till the sugar dissolves completely.
• In a large pitcher, add 3 and half cups of chilled water including sugar and water mix , black salt and lemon juice. Mix well to combine.
• Strain the prepared lemonade into another vessel.
• Pour the strained lemonade into a serving jug and refrigerate.
• At the time of serving, pour shikanji into tall glasses, garnish with mint leaves. Add ice cubes and serve.

CORIANDER LIME CHICKEN
Juicy chicken breasts marinated with coriander, lime juice and cumin. Pan-fry, bake or grill the chicken.
Ingredients
• 3 boneless skinless chicken breasts
• 2 limes approx. 4 tbsp. juice
• 1 tsp ground cumin
• 1/2 tsp salt
• 1/2 tsp ground black pepper
• 1/2 cup chopped fresh coriander
• 1 tbsp olive oil
Preparation
• In a large mixing bowl combine the chicken breasts, freshly squeezed lime juice, ground cumin, salt, ground black pepper and fresh coriander.
• Toss to combine and coat the chicken well.
• Cover and place in the fridge for 2 hours to marinate.
• Heat a skillet over medium-high heat with olive oil.
• Gently pan fry the chicken and cook until well-browned on both sides and cooked through, about 7 minutes per side.
• Allow to rest for 5 minutes before slicing and serving with salad of your choice.

CUCUMBER LIME SALAD
Zesty, refreshing, lemony salad of cucumber and bell pepper with a dash of chilli is the perfect salad to have this summer.
Ingredients
• 1 green bell pepper, seeded and finely diced
• 2 cloves garlic, finely minced
• 3 tbsp fresh lime juice
• 1/4teaspoon red chilli flakes
• Salt to taste
• Black pepper to taste
• 3 tablespoons olive oil
• 2 cucumbers, peeled and cut
• 2tbsp of fresh parsley, finely chopped
Preparation
• Add the bell pepper, cucumber ribbons and garlic to a bowl.
• For the dressing- In a seperate bowl,add 3 tablespoons of fresh lime juice, red chilli flakes, salt and pepper. Use a whisk to incorporate the 3 tablespoons olive oil. Set aside.
• Add the dressing to the bell pepper, cucumber and garlix mix. Toss well to coat.
• Finally, add the parsley. Stir to combine. Refrigerate for a couple of hours before serving.

EASY LIME TEA CAKE
A delicious tea cake thats easy to prepare with the fragrant hints of lime.
Ingredients
• 3/4 cup butter softened
• 1 and 2/3 cups white sugar
• 3 large eggs
• 1 cup milk
• 2 teaspoons vanilla extract
• 1/4 cup lime juice
• 2 teaspoons fresh lime zest
• 2 and 3/4 cups all purpose flour
• 1 tablespoon baking powder
• 3/4 teaspoon salt
Preparation
• Preheat the oven to 350°F. Grease a baking tray.
• Mix together butter and sugar. Add eggs one at a time.
• Add milk, vanilla, lime juice, lime zest to combine.
• Add flour, baking powder and salt.
• Mix with electric mixer until well blended
• Pour the batter into the greased baking tray. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
• Cool cake before serving with tea.
