Relive your childhood with candies

As children nothing was sweeter than getting our hands on a piece of candy. It is time to unleash the child within us and have a crush on candies.

Candied Orange Peel
These tangy and sweet orange peel candies are an excellent way to use up orange peel. These are better than the store ones and quite easy to make.

Ingredients
2 medium sized oranges
1 cup sugar, plus some more for dusting
Preparation
Cut peel from oranges into 1cm strips (julienned) and make sure the white pith is discarded as it may be very bitter. Place peel strips, 1 cup sugar and 1/2 cup water in a saucepan and boil. Reduce heat and simmer till the peels are translucent.
This would take 20 minutes. Drain and transfer peel to a wire rack to dry for 4 to 5 hours. Dust or toss in more sugar as the peel strips should be coated with sugar.

Classic Mixed Nuts Brittle
A sweet and salty, crunchy and brittle with the goodness of nuts is a perfect companion to your tea or coffee.

Ingredients
2 cups sugar
1 and 1/2 cups water
1/2 teaspoon salt
2 tablespoons butter
1 teaspoon vanilla
1/4 teaspoon baking soda
3 cups of mixed nuts (peanuts, almonds, walnuts, and pistachios)
Preparation
In a saucepan over medium heat combine sugar, water and salt. When the mixture comes to a gentle boil and the sugar is dissolved, the colour of this mixture would change from clear to a light golden colour. This process would take approximately 10 minutes. Once the mix is golden in colour, stirring continuously, add butter, vanilla and baking soda. The mixture would foam, once it subsides, the mix will be glossy. Add the nuts in the mix and lay it out on a greased tin or pan. Flatten the mix with a spatula and allow to cool for half an hour before cutting the brittle into desired shapes.

No Bake Coconut Candies
Resembling snow balls, these no bake coconut candies are melt in the mouth and easy to make. A perfect handmade gift for your hosts or a sweet welcome appetiser for your guests.

Ingredients
1/2 cup salted butter, melted
2 cups powdered sugar
3 cups flaked sweetened coconut
1/2 cup chocolate spread (Hershey’s or Nutella)
Preparation
In a bowl mix melted butter, sugar and coconut together until combined well. Form mixture into 1 inch balls and press down slightly in the centre. With the help of a piping bag or a zip lock bag, pipe 1/4 teaspoon of chocolate spread onto each candy. Refrigerate for 1 hour till well set before serving.

DIY (Do it yourself) Cough Candies
A homemade soothing candy which is a bliss when you have a sore throat.

Ingredients
1 cup sugar
1/2 cup water
1 tablespoon lemon juice
1 tablespoon honey
1/2 teaspoon ginger
1/4 teaspoon cloves
1/2 teaspoon cinnamon
Icing sugar/powdered sugar
for dusting
Preparation
Place all the ingredients into a small pan and bring to simmer on medium heat. Cook for 20 mins till the mixture turns thick and dark. Immediately drop 1 teaspoon of mixture on parchment paper. Let it cool completely and toss in icing sugar. Wrap each candy individually for best results.
