Iftar recipe: Soya chunk cutlets

Ingredients
• A cup of soya chunks
• 2 boiled potato
• Half cup grated carrot
• A cup of thinly sliced onion
• 1 tsp ginger-garlic paste
• 2 tsp chopped green chilli
•A teaspoon cumin
• Bread crumbs
• 1 beaten egg with salt
for coating
• Salt as per need
• Oil for frying

Preparation
• Soak soya chunks for half an hour.
•Wash and squeeze it well to drain the water. Blend them in a mixer. Heat a teaspoon of oil in a pan, splutter jeera, add sliced onion and chillies. Saute well. Once it gets light brown colour add ginger garlic paste. Saute well.Now add mashed boiled potato, grated carrot and blended soya chunks . Add enough salt.
• Mix well. Sprinle a little water if needed. Cutlet mix is ready now.
• Make small balls with the mix, flatten it with your hand. Dip it in beaten egg, coat with bread crumbs well and deep fry it in oil in low flame. Flip the other side when one side gets light brown colour. Remove from the oil when both sides become light brown. Repeat the process for rest of the balls.
• Enjoy it with tomato sauce
or your favourite chutneys.
