How to make crumbles for dinner

APPLE CRUMBLE
Bursting with juicy apples and a buttery, crunchy, crumble topping, the perfect apple crumble is quick and easy to make.

Ingredients
• 1/2 kg apples
• 2 tablespoons of caster sugar
• 1 teaspoon of cinnamon (optional)
For the crumble:
• 1/2 cup plain flour
• 1/4 cup cold butter
• 1/4 cup caster sugar

Preparation
Preheat your oven to 200°C. Peel and core the apples. Cut into thick slices and toss them in a bowl with the sugar, and cinnamon if using. Place them in a baking dish. To make the crumble topping, start by sifting the flour into a large bowl. Rub the butter into the flour until it resembles breadcrumbs, then stir in the sugar. Sprinkle the crumble mixture evenly over the apples. Make sure that all the apples are completely covered. Press the crumble mixture down quite firmly. Place the crumble in the oven and bake for 35-40 minutes, until the apples are bubbling and the topping is crisp and golden brown. Leave it to rest for 5 to 10 minutes before serving with custard, cream or ice-cream.

SAVOURY CHEESY VEGETABLE CRUMBLE
With a creamy cheese sauce and crunchy topping, this makes a one pot vegetarian meal that’s made to comfort you.

Ingredients
•500g mixed vegetables of peas, carrots, beans, and cauliflower
For the crumble:
• 1/2 cup plain flour
• 1 pinch of salt
• 1/4 cup butter
• 2 tablespoons white oats
• 2/3 cup cheddar, grated
• 3 tablespoons mixed chopped nuts

White sauce
• 1 onion, chopped
• 1 stick celery, chopped
• 1 garlic clove, chopped
• 2 teaspoons oil
• 1/4 cup butter
• 1/4 cup plain flour
• 500ml of milk
• 1 stock cube

Preparation
Using fingertips, rub together the flour, salt and butter for the crumble. Once it comes together, add in the oats, grated cheese (reserve 1/4 cup for later) and nuts. Chop all the vegetables to a bite size, then add to a pan of boiling water or use a frozen pack of mixed vegetables. Parboil until just tender, then drain and place them in four ramkins. Preheat the oven to 180°C. Add the oil to a pan and soften the onion, celery, and garlic for the white sauce and cook till translucent. Stir in the butter until melted, then add the flour and milk, stirring continuously to make a smooth sauce. Allow the sauce to come to a boil, then crumble in the stock cube. Add in the 1/4 cup of grated cheddar and cook for a further 2 minutes until the sauce is thick and thoroughly combined. Pour the white sauce over the vegetables in the dishes, making sure that all the vegetables are covered. Sprinkle crumble mix over. Top with a little extra grated cheese and bake in the oven for 35-40 minutes until the top is golden and crisp.

EASY FRUITS CRUMBLE
A foolproof recipe to transform juicy fruits into a decadent dessert for you to devour.

Ingredients
•2 cups all-purpose flour
•1 cup oats
•1 cup packed brown sugar
• 1 teaspoon finely grated lemon peel
• 1/2 teaspoon salt
• 10 tablespoons butter
• 400g bite size, mix of peaches, plums, mixed berries and pears
• Sugar as per taste
• Vanilla ice cream, for serving
• Whipped cream, for serving

Preparation
In a mixer, blend flour, oats, brown sugar, lemon peel and 1/2 teaspoon salt until combined. Add butter; beat until coarse crumbs form. The crumble is ready. Toss chopped fruits with a little sugar as per taste. Top with crumb topping in small ramekins.
Bake at 190°C for 45 minutes or until fruit is soft and bubbly; serve with a scoop of vanilla ice cream or whipped cream.
