Peanut Butter Cookies

Preheat oven to 175°C. Cream together 1 cup shortening, 1 cup sugar, and 1 cup brown sugar. Add 2 eggs and beat well. Mix in 1 cup peanut butter. Now in another bowl mix together 2 cups all purpose flour, 1/2 teaspoon salt, 2 teaspoons baking soda and add to the creamed sugar mixture. Mix well. Stir in 1 cup oats. Form dough into 1 inch balls and place on cookie sheets. Flatten with a glass. Bake for 12 minutes at 175°C. Don’t over bake or the cookies will become dry.

Peanut Butter Krispies Brownies

Melt 60g unsweetened chocolate and 1/4 cup butter; remove from heat. Add 1/4 cup peanut butter and 1 cup sugar. Stir in 2 eggs and mix well. In a medium bowl, crush 1 1/2 cups Rice Krispies into crumbs; mix with 1/4 teaspoon baking powder, 1/4 teaspoon salt and 1/2 cup chopped nuts. Add to lukewarm chocolate mixture. Spread batter evenly in a greased pan. Bake for 30 minutes at 170°C. Sprinkle with powdered sugar when cool. Cut into bars.

Peanut Butter Balls

Stir together 230g butter, softened (2 sticks), 1/2 cup peanut butter, 1 can flaked coconut and 4 cups powdered sugar. Let stand for a few minutes. Add 1 teaspoon vanilla. Shape mixture into balls. Melt a 1-inch square of paraffin wax with 1 large packet semi-sweet chocolate bits in a saucepan. Dip ball into mixture and place on parchment paper. When chocolate begins to set up, roll in 230g graham cracker crumbs then in 1 cup chopped nuts. Refrigerate until serving.

Peanut Butter Chicken

Stir 1 egg, 1/2 cup peanut butter, 1 teaspoon salt and 1/2 teaspoon pepper together to blend. Beat 1/2 cup milk into peanut butter mixture until thoroughly blended and smooth. Rinse 8 to 10 chicken pieces in cold water and drain. Put 1/2 cup flour in a bag and shake chicken pieces to coat. Dip chicken pieces in batter, coat with cracker crumbs. Place chicken pieces in lightly greased baking dish or pan. Take 1/2 stick melted butter and drizzle a little on top of each chicken piece. Bake in a preheated 175degrees C oven for 1 hour or until tender.

Peach & Peanut Butter Smoothie

Gently blend and pulverise 4 ripe bananas, skinned and frozen, 1 cup peaches, frozen and 2-3 ice cubes in a food processor. Warm 3/8 cup peanut butter so that it will flow easier. If peanut butter separates, beat together with a fork. Blend peanut butter into frozen fruit mixture for 15-30 seconds. Blend in 1 1/2 teaspoon vanilla and a dash of cinnamon and nutmeg.
