Iftar recipes: Tandoori Dhokla

Dhokla is a healthy steamed rice or semolina cake, which can be eaten either plain or twist into tandoori bites.

Ingredients
For Dhokla
• 21/2 cups semolina
• 1/2 cup rice flour
• 1 cup yoghurt
• 1 cup water
• 1/2 teaspoon green chilli paste
• 2 tablespoons oil
• 1/2 teaspoon fruit salt (Eno)
• Salt to taste
For Tempering
• 1 teaspoon mustard seeds
• 1 teaspoon oil
• Few curry leaves
For Marination
• 1 1/2 cups beaten yoghurt
• 1 teaspoon ginger paste
• 2 tablespoons mint paste
• 1 teaspoon garlic paste
• 1/2 teaspoon black pepper powder
• 1 teaspoon tandoori masala
• 1 tablespoon sesame oil
• Salt to taste
For Garnish
• Coriander leaves
• Grated fresh coconut
• Sautéed onion and bell pepper

Preparation
Combine all the ingredients for dhokla in a bowl except fruit salt, mix well, cover and keep aside for 30 mins. Just before steaming, add the fruit salt and 2 teaspoons of water over the batter and mix gently.
Pour the batter in a greased thali and shake clockwise to spread the batter evenly. Steam in a steamer for 10-15 mins or till it is done, cool and cut in equal sized 2”x 2” pieces.
Heat oil in small pan, add mustard seeds and curry leaves and pour over dhokla. Mix all the ingredients for marination and mix in dhokla cut previously in equal sized 2”x 2” pieces. Keep it for 1 hour for marination.
Heat 1 tablespoon oil in a pan, put half of the dhokla pieces and roast them on low flame for 5-7 mins, flip over and roast for another 5 minutes. Do the same for remaining dhokla. Serve hot, garnish with sautéed onion and bell pepper pieces, coriander leaves, and grated fresh coconut.
