This recipe presents two beautiful sweets: Cake and shrikhand.

Ingredients for Cake

• 1/4 cup butter (soft)

• 3/4 cup sugar



• 1 egg

• 3/4 cup all purpose flour

• 1/4 cup coco powder

• 1/2 teaspoon baking soda

• 1/2 teaspoon baking powder

• 1/2 cup warm milk

• 1 teaspoon vanilla essence

• 2 tablespoons ground almonds and walnuts

Preparation

Take butter in a bowl. Mix sugar well and add one egg and mix together. Sieve flour, coco powder, baking soda, baking powder, and mix everything. Add milk, and add vanilla essence, dry fruits and mix all the ingredients well. Take a baking mould and grease with butter and a little flour. Put cake batter in a mould. Bake preheated at 170C for 25 minutes.

Ingredients for Blueberry Shrikhand

• 1 bowl blueberry

• 3 tablespoons water

• 1/2 teaspoon cardamom powder

• 3 tablespoons sugar

• 1 bowl hung yoghurt

• 6-7 mixed berries for garnish

Preparation

Put the blueberries in a pan with 3 tablespoons water, cardamom powder, and sugar on medium heat and mix till the berries become soft and juicy. Remove from heat. Let it cool.

Gently mix yoghurt with berry sauce. Save 2 teaspoons sauce for garnish. Cut the cake in the middle and take a good heap of blueberry shrikhand.

Apply 1/2 inch coating and cover with half cake and cover the whole cake with the remaining shrikhand. As the texture is a bit rough it will not be a smooth finish.

Now garnish with fresh berries and blueberry sauce. Freeze for 30 minutes and serve chilled.
