Iftar recipes: Chicken and Chickpea Chaat

Chicken and Chickpea Chaat is a fusion creation, in which a boneless chicken breast is grilled and chopped to very small sized cubes, and mixed with canned chickpeas together with finely chopped onion, tomato, fresh coriander, and mint leaves.

Ingredients

• 300g boneless chicken breast, (preferably tendered, frozen one)

• Salt to taste

• 1/4 teaspoon white pepper powder

• 1/2 teaspoon garlic powder

• 3 - 4 teaspoons lemon juice

• 1 tablespoon olive oil

• 2 cans chickpeas

• 1 medium sized onion, finely chopped

• 1 medium sized tomato, finely chopped

• 1/2 cup fresh coriander, finely chopped

• 12-15 mint leaves, finely chopped

• 1 teaspoon roasted cumin powder

• 2 teaspoons chaat masala

Preparation

Slit the chicken breast and rub with salt, white pepper powder, garlic powder, 1 teaspoon lemon juice and let it rest for 30 minutes in the fridge. Brush the chicken with oil on all sides and bake in the oven at 180C degrees for 15-18 minutes. Alternately can be pan grilled also with very little oil. Flip over for even cooking. Let it cool and chop into very small chunks, about 1cm. Open the cans of chickpeas and wash the brine thoroughly in running water. Mix chopped chicken, chickpeas, chopped onions, tomatoes, fresh coriander and mint leaves, roasted cumin, chaat masala, juice of lime and salt in a bowl, and serve.
