BAKED FALAFELS WITH HUMMUS DIP
Easy, baked falafel at home in 30 minutes without deep frying and a super hit at your child’s party.

Ingredients
• 2 to 6 tablespoons olive oil
• 1 cup canned chickpeas
• 1/3 cup chopped onion
•1/2 cup fresh parsley leaves
• 1/2 cup fresh cilantro leaves
• 3 garlic cloves, minced
• 1/4 teaspoon ground cumin
• 1/8 teaspoon ground cinnamon
• 1 teaspoon salt
• 1/2 teaspoon freshly ground
black pepper
Preparation
• Preheat oven to 190 degrees C. Coat a large baking tray with 2 to 4 tablespoons olive oil. In a food processor, combine the chickpeas, onion, parsley, cilantro, 2 tablespoons olive oil, garlic, cumin, cinnamon, salt and pepper. Process until smooth, about 1 minute. • Using your hands, scoop out about 2 tablespoons of the mixture at a time. Shape the falafel into small patties. Place each falafel on tray. • Bake for 13 minutes, then remove the falafel from the oven and carefully flip each one. Return the pan(s) to the oven for another 13 to 15 minutes, until the falafels are lightly browned on both sides.
• Serve with readymade hummus dip.

COLOURFUL FRUIT KEBABS WITH HONEY YOGHURT DIPPING SAUCE

This visual treat of colourful fruits as kebabs with a delicious dip will lure the little ones’ taste buds for sure.

Ingredients
• 2 cups plain low-fat Greek yoghurt
• 1/4 cup honey
• 2 cups seedless grapes
• 2 cups pineapple cubes, from 1 small pineapple
• 2 cups melon balls
• 2 1/2 cups halved or quartered strawberries

Preparation
• In a bowl, mix yoghurt and honey. Refrigerate until well chilled. Thread grapes, pineapple cubes, melon balls, and strawberries, alternating fruits on wooden skewers. Serve kebabs with sauce in bowls for dipping.

CARROT IDLI

A healthy take on idlis with the goodness of carrot that not only makes them look colourful for our little ones but tempting too.

Ingredients
• 1 cup idli dosa batter
• 1 carrot
• 1 teaspoon cooking oil
• 1/2 teaspoon mustard seeds
• 1/2 teaspoon ginger, minced
• 1 green chilli
• Curry leaves, a spring
• Salt, as needed

Preparation
• To begin making the carrot idli recipe, wash and grate the carrots. Add the carrots into the prepared idli batter. In a pan, add oil and heat, now add in mustard seeds, minced ginger, green chilli and curry leaves. • Let them crackle and add this tempering to the idli dosa batter and mix well. Season with salt and mix well till all the ingredients combine well. Prepare the idli pan and pour in the prepared batter. Steam cook on a medium flame for about 12-15 mins till the idli is fully cooked. Insert a toothpick to check if idli is done. It coming out clean is an indication that the idlis are ready. Serve hot carrot idli with South Indian coconut chutney.
