Oman dining: Quick and easy loaf recipes

MEATLOAF MUFFINS
Serve these delicious yet simple meatloaf muffins with steamed green beans and mash for an in house elegant meal experience.

INGREDIENTS
• 1 teaspoon olive oil
• 1 cup finely chopped onion
• 1/2 cup finely chopped carrot
• 1 teaspoon dried oregano
• 2 garlic cloves, minced
• 1 cup ketchup, divided
• 1 kg ground beef
• 1 cup finely crushed crackers (about 20)
• 2 tablespoons mustard sauce
• 1 teaspoon Worcestershire sauce
• 1/4 teaspoon freshly ground black pepper
• 2 large eggs
• Oil for brushing

PREPARATION
Preheat oven to 177°C. Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, chopped carrot, dried oregano, and minced garlic; sauté 2 minutes. Cool. Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients in a large bowl. Spoon the meat mixture into 12 muffin cups brushed with oil. Top each with 2 teaspoons ketchup. Bake at 177°C for 25 minutes. Let it stand for 5 minutes before serving.

TUNA FISH LOAF
Tasty tuna loaf is a hearty and speedy meal where you just mix everything up in one bowl, turn it into a loaf pan, and toss it in the oven.

INGREDIENTS
• 1 cup grated peeled potato
• 1 cup grated carrots
• 1/2 cup water (for simmering)
• 2 cans of tuna (drained)
• 1/2 cup chopped spring onions
• 1 tablespoon chopped fresh parsley
• 1 clove garlic, minced
• 3 large raw eggs
• 1 and 1/4 teaspoon dried crushed mixed Italian herbs
• 2 tablespoons corn starch
• 2/3 cup shredded Mozzarella or Cheddar cheese.

PREPARATION
Preheat oven to 177°C. In a sauce pan steam potato and carrots over simmering water for 5 minutes or until tender. Combine tuna, steamed potato and carrots, onions, spring onion, parsley, and garlic. In a small bowl, stir together eggs, dried herbs, and cornstarch. Combine egg mixture with tuna vegetable mixture. Pour mixture into greased loaf pan. Cover with foil and bake at 177°C for 20 minutes. Remove foil, sprinkle cheese on top and bake an additional 10 – 12 minutes.

CHICKEN AND MOZZARELLA SANDWICH LOAF
A healthy and wholesome sandwich loaf with a smoky flavour of grilled pepper with the goodness of cheese and chicken.

INGREDIENTS
• 1 Ciabatta style loaf
• 2 tablespoons readymade pesto sauce
• 6-8 long lettuce leaves
• 150g mozzarella, sliced
• Roasted or grilled bell peppers (roast them on a grill or sauté them on a grill pan)
• 1 cooked chicken breast torn into pieces

PREPARATION
Cut the top off the loaf approx. 1/4 way down and pull the soft bread out of the centre to make a bowl shape of the crust with a 2cm layer of bread inside. Spread the pesto in a thin layer all over the inside of the bread bowl then layer half of the lettuce leaves over the bottom, then add a layer of mozzarella then the roasted bell peppers then the chicken. Repeat this till the bread bowl is full. End with a layer of lettuce leaves. Replace the lid and tightly wrap the whole thing in cling film and balance a can on top to weigh it down. Leave to firm up for 1-4 hours. Cut into slices to serve.

Note: Dry the roasted peppers and mozzarella on a kitchen towel and make sure you don’t use too much pesto to avoid the bread getting too soggy.

BANANA AND CHOCOLATE LOAF
This simple loaf cake recipe blends chocolate and ripe banana beautifully and makes it a perfect companion with your hot cup of tea or coffee.

INGREDIENTS
•125g unsalted butter, at room temperature, plus more for greasing tin
• 250g caster sugar
• 2 large eggs, lightly beaten
• 1 teaspoon vanilla extract
• 250g plain flour
• 2 teaspoons baking powder
• 4 ripe bananas, mashed with a fork
• 175g good-quality dark chocolate chips or dark chocolate
(70% cocoa solids), broken into small pieces

PREPARATION
Preheat the oven to 180°C/gas mark 4. Grease 1 x 900g loaf tin and line with baking paper or a loaf tin liner. Cream the butter and sugar in a bowl with an electric hand mixer. Add the eggs, one at a time, mixing well after each addition. Add the vanilla extract and beat again briefly. Sift the flour and baking powder into a bowl, then gradually add to the creamed butter and sugar and beat again until well combined. Beat in the mashed bananas and finally stir in the chocolate pieces. Pour the mixture into the loaf tin and level it out with a spatula. Bake in the centre of the oven for 50 minutes, until a toothpick inserted into the centre of the cake comes out clean. Leave the cake in the tin to cool. This loaf cake is best served warm. Keep any uneaten cake in an airtight container at room temperature for about 3 days.
